Okay. So, the roasted chicken I made to pair with this wine is seriously both the easiest roast chicken recipe and the best-tasting roast chicken recipe ever. Right now, just thinking of it, is making my mouth water. I’ll get to the recipe for it in a minute. The best part of the chicken recipe is you can totally whip it up if you just happen to have a whole roaster chicken hanging out. The second of the Pinko de Mayo wines we purchased from our local wine and spirits store was the La Vieille Ferme 2015 Cotes du Ventoux Rose.
This wine had a beautiful appearance
The 2015 La Vieille Ferme ($12, Affiliate link) had a lovely blush color, akin to the body of a white peach. It was just gorgeous. For the value, the La Vieille Ferme 2015 Cotes du Ventoux Rose was a great-looking wine. I just knew that it would avoid the too-sweet problem many people complain of when it comes to rosé. It’s very drinkable, and it’s dry.
Tasting the La Vieille Ferme 2015 Cotes du Ventoux Rose
There was watermelon and strawberry on the nose. Upon tasting, I was surprised; it was a rather full-bodied wine. It was like a combination of olive oil and butter. I was impressed with the nuances with this wine. There were also notes of Hungarian paprika. It made a very nice table wine – and it paired wonderfully with the roast chicken.
All about that chicken
Speaking of the roast chicken. This recipe I use is both the easiest and the tastiest of recipes I’ve found. This is Thomas Keller’s Roast chicken recipe that was shared at Epicurious. If you love things you can just fix and forget, this recipe is for you. You don’t even need to have a lot of things on hand. You just need salt, pepper, and thyme if you like. You can truss the chicken, though I’ll be honest, I didn’t bother and the chicken still came out delicious. You won’t regret making it. Once I had the chicken roasting, I made some easy rice pilaf that came out of a Whole Foods 365 box and some sautéed greens. Did I mention that I’ve been keeping things ridiculously easy since having the new baby? Well, it’s important! Because that’s how we get good nutrition here. Once the chicken is finished, indulge a bit and serve it with some butter and some dijon mustard. Trust me on that. You will not regret it.
The chicken paired really well with the La Vieille Ferme 2015 Cotes du Ventoux Rose. I strongly suggest trying both of these out (preferably together) if you haven’t already. Even though roasting a chicken is traditionally a winter activity, roasting one in summer will give you plenty of chicken (depending on the size of your family) to make up some chicken salad sandwiches for the next day’s lunch!

This sounds fabulous! And very easy. With summer just around the corner, I’m thinking of easy meals and good wine. Roasted chicken and rosé are definitely on my grocery list. Do you think this rosé would go just as well with BBQ’d chicken?

I think it would go well with BBQ’d chicken – but I’d probably do a lighter sauce or something like a peach compote to serve over the chicken so that it doesn’t overpower the wine.
