It’s back to school time. It’s crazy how many supplies schools require families to purchase for students. Whether you homeschool or send your child off to a public, private, or charter school, you’re sure to be feeling the crunch. It’s also amazing how many different options there are for educating children. We’re sending Tiger Boy to a charter school for 8th grade after homeschooling him for many years. What’s important is that no matter what you decide, you need to be involved in your child’s education. We’ve gone shopping for school clothes, school supplies, and even lunch supplies. We bought a couple bento boxes so that our son can take a healthy lunch to school each day.

If you’re looking for some ideas for some great back to school lunches, here are a few:

  • Falafel Pitas with Yogurt Sauce and Grape Salad; Baba Ganoosh and veggie chips on the side for a snack
  • Turkey and mozzarella pita pockets with fruit salad and sea-salt all natural tortilla chips
  • Couscous with olives and tomatoes
  • Penne with Swiss chard, Parmesan, and prosciutto and an applesauce snack

What are you buying for back to school? What are your go-to lunch recipes?
